As often happens with a new year we all start thinking more about our health and wellness. In the kitchen, especially if you are new to cooking and want to be healthier, it is important to have meals that are not only healthy but, quick, and easy. So, with that in mind I created this slow cooker roasted chicken recipe. It is as easy as pulling out a few veggies, washing them cutting them in halves or quarters, placing them in the bottom on the slow cooker. Then simply putting a whole chicken on top with all your fresh herbs and liquids, closing the lid and putting on the slow cooker. Come home later to a delicious healthy meal. This recipe will feed two, possibly three. Do you have four or more just add a steamed veggies when you get home and you have a meal for up to 5 (if two are kids).

Ingredients
- One whole organic, vegetarian fed, chicken
- 5 to 6 stalks of celery (halved or quartered to fit your cooker)
- 3 large carrots (halved or quartered)
- 2 large potatoes (quartered)
- One large onion (quartered)
- One cup organic chicken stock
- One cup white wine
- Three cloves fresh garlic minced (or more to taste)
- Small hand full fresh thyme (or more or less to taste)
- Small hand full fresh rosemary (or more or less to taste)
- (You can also crack some fresh pepper and sea salt over the top if you like).
