Watermelon Salad

Since watermelon is so fresh and in season I decided to pull out the old recipe and adjust it to go with my dads birthday celebration. This salad is light and refreshing on a hot summer day or evening. I love how it turned out.

  • 2 tbs Olive oil
  • 2 Cucumbers Seeded and Cubed
  • 2 Cups Cubed Mozzarella cheese
  • 1 Lime (Juice 2 tbs)
  • 1 Sweet Onion
  • 1 Cup Mint
  • 20 drops Stevia (Liquid is easiest)

  • 2 Knifes (1 Large sharp for watermelon, 1 small dicing)
