Back to school time, so send them off with a filling, healthy and satisfying breakfast they will love you for. What kid doesn’t love waffles and what mom doesn’t love knowing something your child loves is actually good for them? This nut flour based waffle is filled with protein and is so filling they won’t need much. Use the left overs like we did by breaking them up and adding a little sauce cup of maple to there lunch box and they have waffle dipping a sweet treat that won’t have them bouncing off the walls on there teachers.

Ingredients
- 1 1/2 cup Almond flour
- 1/4 cup Coconut flour
- 2 tbsp Zsweet (or your favorite sweetener)
- 1 tbsp Hazelnut Flour
- 1 tbsp Baking Powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp Xanthym Gum
- 2 eggs divided (yolk for whites)
- 1/2 cup and 2 tbsp unsweetened vanilla almond milk
- 2 tbsp coconut oil (melted)
- 1 1/2 tsp vanilla extract

Preheat waffle maker, I find these cook in my iron longer then most and on highest temperature. Put all dry ingredients in one mixing bowl whisk thoroughly. In another bowl with mixer blend eggs whites on high till they peak when you lift out mixer, set aside. Add to dry ingredients remaining wet ingredients mix together. Fold in eggs whites till blended. Grease waffle iron, I use a olive oil spray. Place batter into waffle iron (place in a fairly large scoop, being very careful wet hand and press out batter to about 1/4 inch away from edges, it will look pretty thick, makes big waffles). I make a double batch for us when whole family is eating we have five, one batch makes 3 to 4 waffles, but they are very filling. When iron says it is done carefully see if it is lifting up, if not let cook longer, lift and cook till at desired crispness. I use a fork and spatula to lift so they do not break when taking out, they are heavy and large. Add some berries and maple syrup, enjoy!
