Thick, savory and rich this pie will leave you never happy with another, that is right I am being that conceded about it.  I really think it is the best one I ever put in my mouth. Be sure to use our Worcestershire sauce recipe in this recipe as well to get best and truest Paleo and or Wheat Belly like dishes. To be truly Paleo omit cheese and replace peas with celery.

Don’t forget to check out our blog on gluten free beers for your traditional green beer on St. Patty’s. However, remember if you are truly trying to rid of grains beers are typically made of grains. Maybe a wine this year instead, or if you are truly Paleo no alcohol at all, though not very Irish. 😉 If you do decide to partake this are your best options.

Ingredients

  • 1 tbsp olive oil
  • 1 tsp black pepper
  • 1 lb ground beef
  • 1 large onion
  • 3-4 carrots
  • 2 cups frozen peas
  • 3-4 fresh sprigs of thyme
  • 1 1/2 coconut flour
  • 1 tsp xanthyum gum
  • 1 tbsp butter (plus 5 tbsp more for potatoes)
  • 1 glass or cup red wine
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce (see recipe)
  • 1 cup beef stock
  • 6 large sweet potatoes
  • Salt and pepper to taste (for potatoes)
  • 1 egg beaten
  • 1/4 cup to 1/2 cup grated Parmesan cheese
