Quick Recipe: Paleo Perfectly Crisp Plantain Chips

Ok, so one of my biggest challenges to the Paleo/Wheat Belly lifestyle has been saying no to corn! Corn chips, tacos, corn on the cob so forth. So this month I am working out how to say yes to chips and salsa again with this yummy and satisfying Paleo Perfectly Crisp Plantation Chip. I would like to take a moment to strongly suggest you have a worthy mandolin if you are going to be making any of your own fruit and veggie chips. I made the mistake of trying a cheapy and promptly cut the tips of my pointer and middle fingers off. Gruesome I know, but I want to warn others that saving money on good kitchen equipment (especially those sharp enough to cut through root vegetables) if you are as active as us in the kitchen is not worth it, and in fact just plain dumb. I have the De Buyer mandolin with full safety guards, I love it, and not longer cringe when I start slicing. It comes with a safety guard suited best for potatoes but also has one for longer things like plantains you can purchase separately.

Ingredients

  • Olive oil (enough to fill 2 to three inches in deep pan)
  • Garlic powder (to taste)
  • Salt (to taste)
  • Sliced Green Plantains, length wise or rounded (Length best for salsa and dips).

Plate with paper towel to blot oil

Peel and slice all your plantains. Heat pan with two to three inches of oil (I like olive) till approximately 375 degrees, or on high heat. Cook each Plantain for one to two minutes turning to keep even, only cook up to six at a time to keep an eye on what you are doing. Use Tongs to flip and to pull out when done to desired crispness, then dust on garlic powder and salt to taste. Enjoy!

Tips and Tricks

When peeling plantain first cut each end then score three sides of plantain all the way down. To peel where kitchen plastic gloves, trust me after peeling all of them the first time, I not only had black finger nails but I also felt like the beds of my nails had tiny cuts and they sung and hurt. The gloves prevent the hurt and the dirt, and I was done in half the time do to not having to be as careful with my hands. Also these chips freeze wonderfully and you can eat them up right out of freezer, and it keeps them crisp and fresh. If the do get soft if you keep them out and you have a Advantium microwave just crisp them back up for two minutes and they are back to new!
