We have enjoyed these tasty breakfast treats for years now, and now we are sharing them with you. Great fast and even terrific to go breakfast and as you will see too cute breakfast for lunch idea in our back to school lunch blog. Sometimes it is fun to switch things up and it is also a time saver using leftovers for lunch, we all think of dinner leftovers, but what about breakfast? We pair these with our waffles break them to dipping bites with a little maple. However regardless these adorable little nests are a delicious breakfast and a beautiful little show stopper when having out of town guests.

Ingredients
- 8 to 10 eggs
- 1 large sweet potatoe peeled
- 1 large apple peeled (sweet)
- Bacon crisped
- Green onions or chives
- Salt and pepper to taste
- Balsamic (optional) to taste
Tools
- Food processor
- Muffin tin
- Knife
- Peeler
- Pan for Bacon

Preheat oven to 350 degrees. After peeling and chopping potato and apple in large pieces (de-core apple), put in food processor to shred, I use large shredder. Mix up shred. Then grease muffin tin with coconut oil. Place in shred to tins, use a glass, slightly smaller then muffin tin, to push down into tin to make cup in shred to ‘nest’ the eggs. Make sure the shred goes up the side of tin. Crack in egg to each nest. Put in oven for 15 to 20 minutes. Scoop out with two spoons, going around edge before pulling up. Plate and sprinkle on bacon, chives, salt, pepper, and if desire balsamic. Enjoy!
