[vc_row][vc_column width=”1/1″][vc_column_text]I find one of the things recipe books always leave out is healthy easy side dishes that help you load up on your daily intake of veggies. So with that in mind this month and in celebration of earth day, I am featuring this easy side dish filled with a colorful plethora of earth grown vegetables. You are not limited to our choices of vegetables we made this is an easy way to put in any of your favorite veggies into a beautiful dish. Just remember if you have softer veggies like zucchini they take less time to cook so follow the recipe to those preparations. Also remember to cut harder vegetables at least in half to help cook through.

Ingredients
- Olive oil (enough to coat)
- Garlic powder (to taste)
- Italian Seasonings (to taste)
- A chopped mixture of your favorite veggies to fill baking dish (used here: broccoli, cauliflower, onion, zucchini, squash, red and orange pepper, mushrooms, carrots, and baby tomatoes).

Arrange all veggie except zucchini and squash, leave some room for them. Coat with oil and sprinkle on seasonings. Roast for 10-15 minutes then add zucchini and squash and extra oil and seasoning, roast for another 10-15 minutes. Enjoy![/vc_column_text][/vc_column][/vc_row]
