So I have mentioned that corn has been one of the hardest things for me to rid of since starting our Paleo/Wheat Belly journey, especially corn chips and tacos? Well not anymore between the Paleo Plantain Chips and these ‘Wow!’ Tacos I will never feel deprived again! Soooo good. Keep in mind every oven is different ours is a bit troublesome so we have to cook them a bit longer then most to get them crunchy like our family likes them.

This recipe can easily turn into quesadillas skipping the second cooking step and keeping them soft, put in cheese on top of one then fold over or top with another tortilla and pan fry, the kiddies will love em’. Ingredients Taco Shells
- 3 green plantains
- 1/2 cup olive oil or any favorite Paleo approved oil
- 1 teaspoon ground garlic
- 2 to 3 pinches salt
- 1/2 teaspoon onion powder
- 1/2 squeezed lime

Spoon or spatula (to smooth out rounds of tortillas)

Ingredients Taco Meat
- 1/2 squeezed lime
- Olive oil (for pan)
- 1 pound ground beef
- Taco seasoning:
- 1 tbs chili powder
- 1/4 tsp garlic powder
- 1/4 tsp onion poweder
- 1/4 tsp crushed red pepper
- 1/4 tsp dried oregano
- 1/2 tsp paprika
- 1 1/2 tsp ground cumin
- 1 tsp sea salt
- 1 tsp black pepper

Taco Shells
Peel and slice all your plantains. Preheat the oven to 300 degrees. Combine all ingredients in blender (I would pre-slice up plantains into smaller pieces). Blend until liquid and easy to spread into thin yet thick enough not to break easy tortillas. Place parchment on cookie trays and with ice cream scoop put on scoop of mixture spread and add till you have tortilla about the size of your hand. Bake 25 minutes until solid yet still flexible. Then place torillas over racks centering middle so it won’t slide off. sometime they do so place another baking sheet under to catch any that slide off to prevent a burned up mess at the bottom of the stove and to catch dripping oil, or put foil across bottom oven tray. Bake another 20 to 30 minutes (in our case we needed 45 minutes! However, our oven sucks. Hmmm… business expense, new oven)? Remove from oven and cool. When ready to eat put them back on cook tray and heat for 5 to 10 minutes.
Taco Meat
On medium high heat, cook up meat, half way through and in taco seasoning to taste and squeeze in some lime. Cook till no longer pink and most juices gone. Stuff shells with meat, lettuce, tomatoes and other tacos favorites. Enjoy!
Tips and Tricks
When peeling plantain first cut each end then score three sides of plantain all the way down. To peel where kitchen plastic gloves, trust me after peeling all of them the first time, I not only had black finger nails but I also felt like the beds of my nails had tiny cuts and they sung and hurt. The gloves prevent the hurt and the dirt, and I was done in half the time do to not having to be as careful with my hands.
