Ok so sometimes you just can not beat perfection and to me these bagels are perfect. This is my very favorite Paleo recipe for bagels, I really love this wonderful and inspiring lady’s blog for Paleo foods and I wanted to share it, so what better what then by sharing her bagels, and how beautiful they came out (see this and more at Elana’s Pantry you really must). I make almost all my recipes myself but when I really love someone elses recipe I stick with it and I am happy to promote it. She has some great cookbooks as well that I will be promoting when I get up my recommendation page on EGL, she also and has been featured in Paleo Magazine.

- Food Processor
- Measure cups and spoons
- Plastic Bag
- Scissors
- 2 Donuts Molds (6 Donuts each, I even get part of a mini out in the batch).
Ingredients
- 1 1/2 cups blanched almond flour
- 1/4 cup golden flaxmeal
- 1 tbs Coconut flour
- 1 tsp baking soda
- 1/4 tsp celtic sea salt
- 5 large eggs
- 2 tbs apple cider vinegar
- Poppy seeds and sesame seeds (optional)

Preheat oven at 350 degrees. In food processor pulse all dry ingredients. Add wet ingredients and pulse till mixed completely. Place batter in a plastic resealable bag and snip corner off with scissors. Funnel into donut molds. Grease pan with coconut oil. Bake for 20 to 25 minutes till you can insert toothpick and comes out clean. Let cool one hour.
