It does take a bit of work but it makes a lot and is so worth the effort. This is a great anytime recipe good on it’s own with some veggies on the side or on some maple pancakes or Paleo Biscuits (Coming Soon). Delicious, a great version of a  sloppy joe with the biscuits. I hope your family enjoys this ‘yumminess’ as much as we do. Try it with my homemade BBQ sauce, even better.

Ingredients

  • 2 Mangoes
  • 1 (4 pound)pork tenderloin
  • 2 tbs ground black pepper
  • 1 tsp salt
  • 1tsp chipotle chile powder
  • 1/4 cup balsamic vinegar
  • 2 cups water
  • 1tsp chipotle chile powder (not a mistake you need two separate).
  • 2 tsp honey
  • 1 (1.5 fluid ounce) jigger bourbon whiskey
  • 2 (12 once) bottle BBQ Sauce or my recipe here x 2.

Reduce heat to medium low, and simmer, stirring frequently until mango is reduced and slightly darkened (about 10 minutes).
