What is better in summer then grilling out, and what is better for the 4th of July then burgers and fries? Well this can be quite the conundrum for Paleo and Wheat Belly folks, because our favorite burgers are sandwiched between two pieces of wheat buns and our traditional fries are made with white potatoes. However this delicious French Fried Plantain Fries recipe and our Balsamic Basil Burger recipe are easy quick solutions to this challenge. Instead of white potatoes or even sweet potatoes because they give a very different (but good too) taste, we used plantains. Your whole family will scarf up these delicious little treats with some homemade ketchup. This was one of my happy accident recipes, while making plantain chips I cut the remaining plantain that were left into rounds a little too thick for chips and when I fried them up and tasted them I pulled out my homemade ketchup and got my mom (MiMi). We chowed down on a whole plate full by ourselves! It tasted so much like french fries it was ridiculous, ridiculously good that is.

Ingredients
- Plantains (Ido 6 to 8 for our family of 5).
- Olive oil at least 3 inch deep in pan (I keep oil in fridge between frying and throw out when gets to be to gunky).
- Salt to taste
- Garlic Powder to taste (*optional)

- Knife
- Wok or Large Deep Fry Pan
- Tongs and or Fry basket
- Kitchen Gloves (to peel plantain without getting cut up and dirty).
- Dish to dry with paper towel to catch extra oil

Peel plantains then cut into thinner then thick fry size. I cut plantain in half then each length wise and each half again if need be. Heat oil to 375 degrees on stove top. Throw in small batches of plantains at a time, and fry till golden brown stirring them up with tongs as brown, remove plantain fries from oil with tongs to plate with paper towel to soak extra oil. Then dust to taste with salt and garlic powder while still hot.
Get out your homemade ketchup and enjoy!
