Wheat Belly Autumn Soup

With Autumn on the way what better meal then a heart warming Autumn Soup? This soup is one my grandmother used to make and was a long time family recipe that we modified to fit the Paleo and Wheat Belly life style. It is a juicy, hearty, sweet comfort and my now four year old eats it likes crazy.

Ingredients

  • 1 pound ground beef
  • 1 cup onion
  • 2 cups water
  • 1 cup carrots
  • 1 cup celery
  • 1cup sweet potatoe
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp Italian season
  • 1 tsp minced garlic
  • 1 bay leaf
  • 1 can 28oz diced tomatoes
  • 2 cups beef broth

Tools

  • Large soup pot
  • Spoon
  • Knife
  • Measure cups
  • Measure 1 tsp

Brown and drain meat. Add onion cook till tender. Stir in all ingredients except tomatoes. Bring to a boil. Reduce to simmer, cover and cook for 20 minutes. Add tomatoes cover and simmer another 10 minutes or until vegetables are tender.
