Mason recipes are becoming a trend and I was thinking this summer besides a cute way to store lunches what a geat way to picnic! So this is one of my favorite salad recipes put in a mason. Ingredients
Makes 2 Mason Jar Salads
Dressing (Makes whole Cruet)
- 1/2 cup Olive oil
- 1/4 cup Flax seed oil
- 1/4 cup Apple cider vinegar
- 1 tsp Herbamare (Wholefoods)
Salad
- Mixed greens to liking
- 1/2 cup chopped pecans
- 1/2 cup mixed dried fruit and seeds we use Super Berry Fusion from Made in Nature Organic (from Costco’s).
- 1 can Organic canned chicken
- 1 tbs Lime Juice
- 1/2 cup Green Mayo
- 1 small green apple cubed
- Salt and pepper to taste
- 1/4 cup or more chopped onion

Mix dressing with all ingredients in a a dressing cruet. In mixing bowl mix together mayo, chicken, onion, salt, pepper and lime juice. In mason jars start by layering at bottom first one tablespoon dressing then green apples to keep the rest fresh from dressing, next chicken mix then pecans followed by seed and fruit mix and lastly top with a couple handfuls of mixed greens. I used medium jars I suggest larger to put in more lettuce. Enjoy!
