Ok so this was an add on article to my list for this month after our entire family went through the first cold/flu of the season. What frustrates me is there is no real easy fix for Paleo/Gluten Free/Wheat Belly folks when they get sick. There is either, noodles, rice, sugar or some sort of wheat/grain in all the soups and no hope for a good and true Paleo cracker out there on the shelves to stock up on for cold and flu season even the brands calming to be Paleo have cassava and /or tapioca flour that spike the blood sugar . So here is my remedy, stock up early in the season on these in your freezer, awaiting those days you just can’t cook or shop: This Paleo Chicken Soup and buttery goodness Oyster Crackers to satisfy that bready/ cracker desire when sick.

Ingredients
- 1 (3 pound) whole Chicken
- 4 carrots halved (or a few more to taste)
- 4 stalks celery halved (or more to taste)
- 1 large onion halved
- 4 cups chicken broth plus enough water to cover chicken and veggies in pot.
- Salt and Pepper to taste
- If for non sick day you can add fresh herbs like rosemary and thyme (otherwise keep bland for stomach).
Tools
- 2 large bowls
- 2 large soup pots
- Strainer
- Spoon
- Knife
Place all ingredients but spices in large Soup pot and simmer uncovered till chicken falls off the bone. Then remove chicken into one bowl and veggies in another. Put strainer over another large soup pot and strain remaining broth into pot. Cut up veggies, they are squishy but no worries still tastes great. remove strings from celry as cutting and any parts of onion not cutting, carrots chop nicely. (I tried chopping ahead one time because I did not like this and found out how hard it was to separate to drain broth of bones with chopped veggies, so cook them whole). Place veggies back in broth. De bone chicken and hand shred when cooler. (Do not skip hand shredding, cooking chicken this way small bones get mixed in, this is best way to feel and catch them). Add chicken to pot, and salt and pepper to taste. This is also a good time to add fresh herbs if you so desire. Simmer to cook in spices and keep warm for serving. Enjoy!
