Ingredients

  • 1 3/4 Cups Blanched Almond Flour
  • 1 tsp Xanthyum Gum
  • 1/4 tsp Sea Salt
  • 2 tbs Honey
  • 1/4 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/2 tsp Vanilla
  • 1 Egg

  • Cookie Sheets
  • Rolling pin
  • Large Bowl
  • Wood Spoon
  • Food Processor (to shred cheese)
  • Measure cups and spoons
  • Animal cookie cutter

Preheat Oven 350 degrees. In a food processor combine flour, xanthyum gum, salt, honey, and spices on high. Use spatula to make sure all edges are blended in. Then add egg on high. Place dough in bowl and if still too sticky add more flour by the table spoon till just tacky to touch. Sprinkle flour on parchment paper. Place dough down then add more flour on top so that when you press top parchment to roll it does not stick. Roll out till about 1/4 inch thick. Then press animal or other small shapes into dough. Continue to sprinkle with flour to keep dough from sticking. Re-roll out left over dough and re-cut with cookie cutters till all dough it in shapes. On a parchment lined cookie sheet place all cookies as cut. Bake for 14-18 minutes. Cool for hour. Remember to check often as cooking if some are thinner they will cook faster.
