DIY: Paleo Coconut Macaroon Egg Hunts

Another easy and quick treat for this Easters excited little egg hunters. An after celebration piece to all their hard work. In theme to the hunt these green coconut macaroons are crowned with jelly bean eggs in representation of the hunt. Enjoy the yumminess with the kiddies.

Ingredients

  1. A pack of jelly beans (I use Surf Sweet jelly beans, I do not use a lot because they do have cane sugar although the label on front claims organic fruit juice sweetened, but they are the best I can find pre-made).
  2. Food Coloring (I use India Naturals – vegetable food dyes).
  3. 2 1/2 cups of coconut
  4. 1/4 cup honey
  5. 1/2 tsp vanilla optional (if use this may need more honey to thicken mixture again)
  6. 1/4 tsp sea salt
  7. 2 large whites

How to

Preheat oven to 350 degrees. Mix up a small batch of food coloring with blue and yellow dyes to make green make sure thoroughly mixed will appear much darker then will appear. Place coconut in mixing bowl and slowly pour in green coloring mix thoroughly again. Keep mixing and adding till get the desired effects. Then mix egg whites and honey with fork, then add vanilla it desired, you may notice this things liquid so add more honey till mixture thickens. add in salt mix. Then toss in coconut and coat till covers all coconut with mixture. Place in fridge for 1/2 hour. Then scoop out in ice cream scoop and release to parchment covered cookie sheet. Bake for 10-12 minutes, top with jelly beans by dabbing on a bit of honey to each then throw back into oven for two minutes to fuse jelly beans.
