Ok so this was an add on article to my list for this month after our entire family went through the first cold/flu of the season. What frustrates me is there is no real easy fix for Paleo/Gluten Free/Wheat Belly folks when they get sick. There is either, noodles, rice, sugar or some sort of wheat/grain in all the soups and no hope for a good and true Paleo cracker out there on the shelves to stock up on for cold and flu season. So here is my remedy, stock up early in the season on these in your freezer, awaiting those days you just can’t cook or shop: Paleo Chicken Soup and this buttery goodness Oyster Cracker to satisfy that bready/ cracker desire when sick.

Ingredients
- 1 cup ‘all purpose flour’ (see recipe below)
- 1/2 tsp sea salt (iodized)
- 1 tsp honey
- 1 tsp baking powder
- 2 tablespoons cold butter (unsalted and cubed about 1/4 inch)
- Cold water at a tbs as needed
Ingredients for “All Purpose Flour”
- 4 cups Almond Flour
- 1 cup Golden Flaxseed Flour
- 1/4 cup Coconut Flour
- 1 tsp Psyllium seed
- 2 tsp Baking Soda
Instructions
Whisk all ingredients in bowl, place in storage jar.

- Parchment paper
- Cookie Sheets
- Measure cups and spoons
- Rolling pin
- Pizza cutter or pastry cutter
- Mixing Bowl
Preheat oven at 375. In a mixing bowl whisk flour, salt, baking powder. Add in cubed butter and mash into flour mixture till thoroughly mixed together. Add honey and continue to mix by hand this may make flour ball already if necessary add tbs of cold water one at a time till balls easily. Place on parchment then put another piece of parchment on top and roll out to about 1/8 inch thick square or rectangle. Cut into desired shape keeping them small for soup dunking. Separate slightly on a parchment lined cookie sheet. Bake 6-9 minutes continue to check so don’t over cook, just till crackers brown. Let cool 10-15 minutes. Enjoy! I like to make three to four batches at a time and freeze extras for the flu season.
