Why do I scream? Because ice cream is my weakness, and since this life style change it doesn’t really fit into my regular grocery list with all the junk they pack into it in the stores, it is a big no no now. 🙁 So… I immediately went out and bought an ice cream maker so I could explore my own ice cream recipes. My mom knew it was crucial to keep me from going off the deep end to get me some satisfying ice cream stat, so we started right away on one of my all time favorites, mint chocolate chip.
Our first run was a yummy fresh mint brown ice cream. Who knew mint would turn cream brown… sigh. So I got to thinking what could make something green… SPINACH! Now before you go all eeeeeewwww on me, first let me say spinach is used in a lot of ice creams and desserts for color and nutrients, but if done right you can not even tell. I gave some to my husband and after he gobbled it down I told him there was spinach in it, he laughed at me, laughed! Jokes on him. 😉 Not to mention that picky three year old I mentioned before, he ate it up like there was a world storage. That all said my problem is being solved and I even get the benefit of saying it is good for me when I chow down. 😉
Also, for my tried and true Paleo followers, I know, I know, no dairy. My family does believe in small amounts of dairy. We also follow a wheat belly lifestyle, which encourages some dairy and some legumes. But in essence I believe truly, both are whole healthy ways of life whether you stick to one or the other. We say we are Paleo because that is what kick started our way of life and those two differences are the only changes we, along with many Paleo lifestyle people, are doing it a bit differently, and in limited amounts. If you want a full fledged Paleo version simply use coconut milk in place of dairy.

Ingredients
- 1 cup Half and Half (to make truly Paleo use coconut milk)
- Pinch Salt
- 1/4 cup Honey
- 1/4 cup Coconut Sugar*
- 1 and 1/2 tsp Vanilla Extract
- 1/2 cup Mint
- 1 cup Spinach
- 1/2 cup Chocolate Chips or Shavings (coming soon our homemade chocolate chips)
* (Since doing this post we have found coconut sugar acts in the body much like regular table sugar as well as honey. However honey has other nutrients that others don’t and if you use tupelo honey it works well for even diabetics in low amounts.
