Here is a recipe from my German side of the family. The secret ingredient is sugar, which was always the secret ingredient with Great Grandma Smith, she put sugar in everything. Seems unlikely for deviled eggs, but trust me they are great.

Since a Paleo lifestyle has been adopted in our household I have substituted Stevia for sugar and find my family still gobbles them up. If you have never tried Stevia, Stevia is a healthy substitute for sugar, but like anything it may taste a little different to you until you get use to it, so you can always use sugar.

This is one of my family’s favorite recipes and is a part of every family holiday and party. It’s a funny thing with tradition and how it is born; it was my Great-Grandma Smith on my father’s side of the family that introduced the recipe to my mother who in turn introduced it to her mother, my Grandma Cruzan. They became an obsession with my mother’s side of the family even more than my father’s side of the family. My fondest memories of the egg recipe are with my Grandma Cruzan, mom and me in the kitchen on holidays making and tasting eggs. I feel blessed to be able to share with my daughter and Tristan these same fond memories keeping the tradition alive…

  • ½ Measuring cup

  • Deviled egg tray or plate to hold eggs
  • One medium size pot and lid for boiling water
  • A pair of scissors
  • Fork
  • Paper towel

Need to Know

  • Allow twenty minutes to boil eggs
  • Approximate prep time of fifteen to twenty minutes after eggs have been boiled
  • Servings of exactly sixteen (eight eggs will produce sixteen halves)

Ingredients

  • Eight organic eggs
  • ½ cup mayonnaise (Do NOT use Hellman’s Mayo, best is to use Tessemae’s or make your own, here is our recipe).
  • 10 to 20 drops of Stevia or (or to taste) or your choice sweetener, start with 1/2 teaspoon (or to taste)
  • Pinch of salt
  • Pinch of pepper
  • 1/8 teaspoon mustard
  • 1/8 Teaspoon apple cider vinegar
  • Paprika

Now begin to peel off the shells by tapping the shells on a hard surface like the bowl they are in and begin the peeling as the eggs surface cracks. I like to crack the whole eggs surface and use my fingers to get the eggs shell loosened a little before trying to peel the shell. I always do this last, so I can have the “taste tester” try the yolk mixture as I add a little and taste test the eggs yolks, continuing to add more till I get just the right sweetness. I use to always be Grand Grandma’s tester, then Grandma’s tester, and finally mom’s tester. After Amanda grew older she was the tester for Mom and me.
