Here is the first recipe, one of our favorite morning breakfasts, Capri eggs. It is simple and fast for a scramble and feels fancy like you spent all day making it.

Ingredients
- 6 eggs
- 2-3 tomatoes (depends on how big and tastes)
- 3 cloves fresh garlic
- 1/4 cup Parmesan cheese
- Log pre-sliced fresh mozzarella
- Salt and pepper to taste
- Handle full fresh basil minced
- Olive oil and balsamic vinegar to drizzle

On medium high heat saute most tomatoes and garlic till becomes kind of sauce like, then add in last tomatoes and cook till slightly soft. Place tomatoes aside in bowl then use pan to scrambled eggs, when at desired scramble add back in tomatoes, when mixed put in basil and toss. Set off heat. Plate two mozzarella pieces to the side of plate then scoop some of the egg to the side. Lightly drizzle olive oil and balsamic vinegar over, serve and enjoy!
